The restaurant offers Japanese cuisine based on traditional Japanese kaiseki cuisine, using local ingredients carefully selected for each season. Enjoy a full-course meal that will make you savor the calendar with our thoughtful hospitality.

Ingredients are all seasonal and carefully selected by our chefs. The Japanese cuisine that brings out the natural flavors and aromas of the ingredients is a scene of the four seasons in Hakone. The variety of cooking methods and the presentation of the natural beauty of Gora will satisfy not only the palate, but also the soul. The sake sommelier carefully selects the best sake from all over the country. To conclude the course, we offer a beautiful dessert created by our in-house pastry chef.

Head Chef

Ken Akahoshi

Born in Nagasaki Prefecture
After graduating from high school, he worked at a local kappo restaurant for five years before moving to Tokyo. In 1997, he joined "NADAMAN Co., Ltd." in order to acquire culinary knowledge and skills. He was assigned to the Imperial Hotel, where he was involved in restaurant operations, banquets, and the provision of food for VIPs in Japan and abroad, including the Prime Minister's official residence. After working in restaurants, ryotei (Japanese-style restaurants), weddings, and catering at hotel restaurants in Tokyo, he was appointed acting head chef of the Yokohama branch in 2017. Atami Izusan KARAKUIn 2020, he will be appointed as Chef de Cuisine at Sendai Nadaman. In 2020, he will be serving food that satisfies customers while respecting the taste of natural ingredients and the spirit of harmony, and in 2023, he will join ORIX Hotel Management Corporation after gaining experience in serving food to executives at Toyota Motor Corporation's entertainment facilities. He joined ORIX Hotel Management Corporation in 2023 and has been with the company ever since.

A Japanese space healed by natural materials.

The light walls decorated with Kumiko patterns and the pillars finished with woodblock prints are a modern design that incorporates traditional Japanese furnishings in a stylish way. The restaurant also offers a view of the water terrace through one of the windows, where you can dine while enjoying the scenery that changes from day to night. The restaurant's layout has been carefully designed so that there are no lines of sight, allowing you to spend time with your loved ones in a relaxed atmosphere.

Breakfast

Enjoy local ingredients from the mountains and the sea, and fluffy cooked white rice.

The main dish is fluffy cooked white rice. The rice is carefully selected according to season, and the more you chew it, the sweeter it becomes, allowing you to fully enjoy its original flavor. Accompanied by a colorful selection of side dishes from nearby production areas, you can enjoy a fruitful Japanese breakfast that will deeply touch your body and soul.
